Old Foghorn is highly hopped, using only Cascade hops. It is fermented with a true top-fermenting ale yeast. Carbonation is produced by an entirely natural process called "bunging," which produces champagne-like bubbles.  This barleywine ale is dry-hopped with additional Cascade hops while it ages in cellars.

The nose is characterized by sherry, caramel, and roasted filbert aromas, complemented by some floral, hoppy notes. The finish is long and warming, but remains in balance with the flavors.

Its slightly brown colour is the result of the roasted barley. It has a dark ruby brown colour and a very intense aroma. The aromatic herbs and spices used greatly enhance its delicious smell. This beer is full-bodied with a smoothness that is the result of the synergy of caramelized malts, carefully controlled fermentation and long cold storage. St Feuillien Cuvée de Noël has a very subtle bitterness that is the dominant flavour in this harmonious ale that strikes a perfect balance between all the different ingredients.

Deschutes Brewery Bend OR deschutesbrewery.com 541-385-8606 2007 Oak Aged Jubelale Winter Warmer 6.7 Oak Aged Jubelale is characterized by a large malt body from generous amounts of Crystal malt.  It is balanced with pronounced hop bitterness, in both aroma and flavor, derived from five varieties of European and American hops. This version has been aged in three-year-old Cabernet and Syrah barrels for two months.  It was then blended five parts Jubel to one part Bitter Ale, and dry-hopped with East Kent Goldings.

Fort George Brewery & Public House Astoria OR fortgeorgebrewery.com 503-325-PINT (7468) North Red Wheat Wine 8.8 North is a multigrain red wheat wine designed for shipment to the Great Alaskan Beer and Barley Wine Festival.  This extremely complex ale is derived from 11 different international malts, as well as hops from New Zealand and Washington's Yakima Valley.  The rich mahogany colored brew has a sweet nose of honey blossom, and a malty yet dry fruity rye flavor, with a creamy texture and a crisp-bitter hoppy finish.
Full Sail Brewing Co Hood River OR fullsailbrewing.com 541-386-2247 Wreck the Halls American IPA crossed with a Winter Style Strong 6.7 Wreck the Halls is a holiday brew to end all holiday brews.  It is aggressive and sublime, assertive and mellow, complex and drinkable, and features a lot of of hops.  ESB malt from the Okanogan Valley in British Columbia, along with Crystal and Caramel malts, give this beer a sweet malt body and red color.  Centennial hops provide the pronounced fruity-citrus character.  The beer is dry hopped for three weeks, which amplifies its aromatics and flavor.

This commemorative brew, made by OBC member Preston Weesner, is a blend of beers from Hair of the Dog brewer Alan Sprints, including oak aged Fred, Adam, and Doggie Claws, with fresh Blue Dot Imperial IPA added for hop balance and aroma, and a Belgian to dry it out.

Standing Stone Brewing Co Ashland OR standingstonebrewing.com 541-482-2448 Lost Claus Barley Wine Barley Wine 10.0 Dark mahagony in color, Lost Claus Barley Wine is a heavily malted ale with concentrated caramel flavors produced by boiling the wort for 3-1/2 hours in the kettle.  To balance the sweetness, four different types of hops were used.  At 10% ABV and 72 IBUs, moderation is key, or you may become a "Lost Claus."
Widmer Brothers Brewing Co Portland OR widmer.com 503-281-2437 Decorator Weizendoppelbock 7.7 Widmer’s Decorator is a Weizendoppelbock brewed specifically for the 2007 Holiday Ale Festival.  It is a medium bodied, lightly hopped ale with the orange color of a crisp Autumn sunset sky.  The low amounts of Hallertauer hops provide just enough hop character to keep the warming presence of alcohol in harmony with the rich malt flavors from wheat, pilsner, munich and caramel malts.  The bouquet is reminiscent of dark fruit, with the slightly bready aroma coming from the wheat malt and the banana esters and clove phenols derived from the German wheat beer yeast.
